In a baking dish, mix brown sugar and melted butter. Arrange pineapple slices on top.

In a bowl, mix flour, sugar, baking powder, cinnamon, and salt.

Add coconut milk, vegetable oil, and eggs. Mix until smooth.

Pour the batter over the pineapple slices.

Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Cool for 10 minutes before inverting onto a serving plate.
