Step1

Cook the rice until 70% done and set aside.

Step2

Heat oil in a pot and sauté onions, garlic, and ginger until fragrant.

Add mixed vegetables and cook until tender.

Add biryani masala, turmeric, chili powder, cumin, coriander, yogurt, and salt. Stir well.

Step5

Add tomatoes and green chilies. Cook for a few minutes.

Step6

Layer the partially cooked rice over the vegetable mixture.

Step7

Cover and cook on low heat until the rice is fully cooked and the flavors are well combined.

Step8

Garnish with fresh coriander and mint before serving.
